Sautéed Brussel Sprouts with Andouille Sausage

Before I committed to a paleo lifestyle, I never had a breakfast meal with vegetables unless I was eating an omelet or something. And now, my breakfast doesn’t feel complete unless I have plenty of vegetables. This Brussel sprout dish is one of breakfast favorites served with an over easy egg. I always have plenty left for leftovers and this turns into a great dinner served with either mashed potatoes or mashed cauliflower. Enjoy!

Instructions
Prep Ingredients:
  1. Slice onion into 1/4 slices. Slice or shred Brussel Sprouts. Slice andouille sausage into 1/4" coins.
How to Prepare:
  1. Sauté onions in avocado oil until fragrant and slightly translucent.
  2. Add Brussel sprouts and all dried seasonings, stir well.
  3. Cook Brussel sprouts for 7-10 minutes.
  4. Add andouille sausage and cook for an additional 7-10 minutes.
  5. Enjoy!
