Before I committed to a paleo lifestyle, I never had a breakfast meal with vegetables unless I was eating an omelet or something. And now, my breakfast doesn’t feel complete unless I have plenty of vegetables. This Brussel sprout dish is one of breakfast favorites served with an over easy egg. I always have plenty left for leftovers and this turns into a great dinner served with either mashed potatoes or mashed cauliflower. Enjoy!
