I’m a mother, full time corporate office worker, a spouse and a foodie enthusiast. My whole life I have battled with my weight. I’ve done it all – counted calories, eliminated carbs, eliminated fats. I even wrapped myself in plastic wrap prior to workouts thinking this would help me lose weight faster. All the while – I had fueled my eating disorder and it was just a disaster. I was successful in losing weight and I was even more successful in putting that weight back on. So you guessed it – I was a pro yo-yo dieter.
September 7, 2016 started my journey with Paleo. I was introduced to Paleo by way of Whole 30. I eliminated all added sugars, grains, soy, legumes, alcohol and dairy to my diet. Truth be told, I was supposed to start on September 6 – but I failed my first day. You guys, I didn’t even want to start. I didn’t want to restrict myself from the food I enjoyed. As a Filipina who enjoys Asian food with a passion – it was hard for me to wrap my head around not being able to eat the food I grew up with and enjoyed eating.
But something deep in me knew I needed this. It wasn’t about my size but it was about my health. I was not healthy. I couldn’t run without being out of breath. Heck, I couldn’t walk two blocks at a brisk pace without being out of breath. My snoring became severe and I wasn’t sleeping well because I couldn’t breathe. My ankle and foot would swell up often. I looked puffy in pictures. Oh and you know the worst? When you go out and can’t fit in a restaurant booth. When it is so tight and you have to hold your stomach in the whole time – yeah that was me. So like I said, deep down I knew I needed it and somehow pushed through.
Paleo has been successful for me because it has helped me learn to feel good – on a daily basis. My life is so different because of the food I choose to fuel it with it. And my relationship with food has changed as well – it is no longer this love/hate relationship. Through the Whole 30 Program – I learned about food freedom and knowing that I always have a choice to eat something. I just have to decide if it is worth it for me. And often times – I find it won’t be.
Crazy how food dictates so much in lives. Almost everything we do revolves around food in some way. Where I am at in my journey – I have power over my food, it no longer has power over me. I never feel like I am missing out on something because I choose not to eat it. When you realize that the slice of pizza or taco is not life changing, it really sinks it. That instant gratification of food becomes less important. This change in my mindset is what has been successful in my lifestyle change.
Through all things Paleo – I have lost almost 80lbs. And 70lbs of that was just through diet alone. I didn’t exercise but I believe that on a path to becoming the healthiest version of yourself – it is inevitable to start doing more to become healthier.
The best part? I still eat good, satisfying food. I mean because once a foodie, always a foodie right? With Paleo I have learned to adjust my ingredients and produce food that taste just as good if not better than the original dishes.
So that’s what I am here to do – I am here to share those recipes with you all. Inspire you from my kitchen to yours with love and delicious recipes.
Please note that I am not here to teach you about Paleo – there are plenty of resources available online for that. If you need or want suggestions on where to start with Paleo information – please do not hesitate to ask, I would most obliged to share what inspired my journey.
